Pots de Chocolate

250ml heavy cream
240g milk
5 large egg yolks
170g semisweet chocolate, chopped
0.5 tsp coffee powder
0.25 tsp salt

Heat the cream and milk until it simmers.

Whisk the egg yolks in a bowl. Add cream mixture slowly.

Return to pan stir over medium-high heat for 2 minutes.

Add chocolate, coffee, salt. Let melt then whisk until smooth.

Strain mixture. Pour into 6 ramekins. Fridge 2 hours.
