An easy and healthyish snack consisting of dates, peanut butter, chocolate and coconut flakes, simple as that.
Perfect for some quick energy after sports or as a dessert when those cravings set in.
Kids love them too!
Ingredients
200g pitted dates
100g/6 spoons peanutbutter
100g chocolate, of your preference
20g coconut flakes
Instructions:
Half the dates and lay them, with the inside facing up, on half the side of a parchment paper.
Fold over the other side of the parchment paper and place a chopping board on top and press and stomp on it (yes it will get a bit physical here) as much as possible until the dates have turn as flat as possible.
To ease the removal of the barks once done, flip the date sheet upside down and remove the parchment paper, then lay back the parchment paper and flip it back over.
Remove the top paper and place the peanut butter on top and spread out evenly with a spoon or spatula.
Melt the chocolate in a glass in a microwave, make sure to mix the chocolate every 10 seconds. It should be done after about 40 seconds when there is still a few pieces left of chocolate. Set it aside to cool for a few minutes. Stir and swirl the chocolate over the peanut butter. Spread it evenly with a spoon or spatula.
Sprinkle the coconut flakes on top. Fold over the other side of parchment paper. Place on the cutting board and cover with plastic film. Place in the freezer for an hour.
Once hard, cut into 15 squares. Enjoy!
